But how do you actually translate homegrown or locally sourced, seasonal ingredients into compelling botanical beverages your guests will order again and again? In this hands-on learning lab, you’ll explore how garden to glass mixology can become one of the most powerful—and profitable—tools in your bar program. With botanical flavors trending and many of these ingredients already moving through your kitchen, there’s a major opportunity to reduce waste, lower COGS, and build drinks with a true sense of place.This seminar will give an overview of the myriad techniques possible to extract and preserve flavor as a bartender, how to start a cocktail garden on any scale, and how ultimately how doing so can lead to drink development your guests will get excited about.
Examining syrups, shrubs, teas, tinctures, bitters, juices, infused spirits, and garnishes, as well as the extraction and infusion methods that tie these together, this is a Botanical Beverages 101 class for bartenders and home bartenders alike. You’ll experiment with balance, texture, and aromatics in real time, and leave with a garden-to-glass cocktail you design yourself—plus the skills, systems, and inspiration to replicate it and grow your own program.

Seminars will be hosted at the Ritz-Carlton, New Orleans and will range from 60-90 minutes. Brands will receive logo placement on the TOTC2025 agenda and signage and have the opportunity to have their product served during their sponsored seminar.
