We often talk about the aroma and flavor of our drinks, but how often do we talk about their texture? Weight, viscosity, fluffiness, density, heaviness. The texture of a drink is often overlooked, but is a key component in how it is enjoyed. In this class, we will explore texture in cocktails and spirits- what it is, how it works, and how to get creative with chemistry and physics to unlock your next level of drink-making. Please join bar owner and drinks-science expert Dave Arnold (Cooking Issues Podcast, Bar Contra), bar owner Mike Capoferri (Thunderbolt, Semiprecious, Night on Earth), and Campari Academy Director Jessamine McLellan for this class that is equal parts science, service, and psychology. It might get complicated, and will definitely go off on some tangents, but it will never be boring. Students will leave with a new perspective and helpful tools for their next well-textured cocktail.

Seminars will be hosted at the Ritz-Carlton, New Orleans and will range from 60-90 minutes. Brands will receive logo placement on the TOTC2025 agenda and signage and have the opportunity to have their product served during their sponsored seminar.

Seminar sponsorships are responsible for the underwriting of the spirits served and will be ordered through the Foundation.

Following May 18th, 2026, all confirmed partnerships will incur a 5% late fee (included in total at checkout) and payment is required in full by credit card.
